I have to be gluten-free, so I'm limited on certain things. Cousin T's gf mixes are perfect! They hold up but not dry. Use for pancakes and waffles. I make a big batch and reheat in toaster. I've tried quite a number of gluten free pancake mixes, but this one is hands down the best! I used the gourmet recipe on the back of the box & used vegetable oil instead of butter. I always allow my batter to rest for 20 minutes or so before I use. Gluten free batter seems to bind better when it sets for a time.

One word... perfection. It's extremely rare to find gluten-free pancakes (or anything for that matter) that are not gritty, dry, mealy, fall apart easily, or taste like cardboard. This one is utterly perfect, in that you can't tell that it's gluten-free at all. If anything, it's actually better than regular pancake mix, in that if done just right, you can achieve an everso light crispy edge to it, if that isn't cool, I don't know what is! It makes for a very happy stack of flapjacks any time of day... paired with the pure maple syrup, you'll be sure to taste freedom ring.
